PURPOSE: To obtain SATSUMA-AGE (a deep-fried fish-paste ball or cake originating in the KAGOSHIMA area of Japan), having a soft and plain texture without being bent or twisted even when formed into a relatively thin platy shape and provide a method for producing the SATSUMA-AGE.
CONSTITUTION: This method for producing SATSUMA-AGE 1 is to form ground fish meat into a prescribed shape, apply the formed ground fish meat to a wooden platy material 2, immerse the ground fish meat together with the platy material 2 in a heated oil, solidify the ground fish meat and provide the SATSUMA-AGE 1 in which a fried coating is formed on only the surface out of contact with the platy material 2. A wooden frame unit may have an outer peripheral part of the SATSUMA-AGE 1 sticking thereto.
