Abstract:

To obtain a yogurt with a sauce, capable of keeping a viable cell number of Bacillus bifidus even in preservation.

This sauce separate type yogurt comprises a sauce containing an emulsifier and a yogurt containing Bacillus bifidus and can keep the viable cell number of the Bacillus bifidus in preservation by adding the emulsifier to the sauce in production process so as to suppress the dispersion in or migration into the yogurt of harmful components for survivability of the Bacillus bifidus, such as saccharides and organic acids in the sauce.
