PURPOSE: To obtain a novel spare riblike sausage, by untwisting a twisted part of a sausage filled in a casing, inserting a porcine rib, protruding the rib from the casing and closing the casing.
CONSTITUTION: Seasoned raw material meat is filled in a casing, fibrous casing, etc., and long twisted casing tied in a row (a) is alternatively cut at linking parts 2 to provide double pieces (b). The central linking part (b) is untwisted and a preboiled porcine rib (d) is inserted from an opened end 4 of the casing 3 into a substrate (c) to the other side end 5. Both ends 6 and 7 of the porcine rib (d) are protruded from both ends 4 and 5. Each end of the casing is bound with, e.g. a thread, and the pieces are subjected to drying-smoking-boiling-cooling steps to afford the aimed sausage.
