Abstract:
PURPOSE: To obtain a seasoning containing plum vinegar, usable without deteriorating the flavor of a food material and preservable over a long period and to provide a process for producing the seasoning.
CONSTITUTION: Plum vinegar having decreased salt content is added to a seasoning raw material composed mainly of brewed vinegar and soy sauce.
