Abstract:
PURPOSE: To enable an egg to be preserved for a long period and process such as boiled egg or make egg roll and cook as raw egg in a state of attached eggshell as it is, by immersing eggs with eggshell in seasoning solutions having fixed temperature difference alternately.
CONSTITUTION: Egg with eggshell whose surface is cleaned are alternately immersed in two kinds of warm and cold seasoning solutions having 20±5°C temperature difference alternately for 15min and these operations are repeated ≥6 times.
