Abstract:

To provide a seasoning making it possible to easily prepare a real soup in a short time.

Dried fishes comprising dried sardines, dried bonitos and dried mackerels are shaved into pieces each having a width of 4-7 mm and a thickness of 20-50 μm in the direction substantially orthogonal to the direction of the fibrous tissues of the dried fishes. The shaved dried fish pieces are mixed with chip-like cut tangle pieces and a seasoning solution comprising a suitable mixture of soy sauce, sugar, salt and mirin (sweet rice wine for seasoning) to obtain the seasoned dried fish shaves. The seasoned dried fish shaves are packed into small water-permeable tea bags to form the seasoning for the soups of noodles. Since the seasoning is decocted on the eating of the noodles, the scatter of flavor ingredients which are mostly scattered on the decoction can be prevented. When mixed with the seasoning solution, the shaved dried fish pieces are not flocculated into the massive product, can easily be seasoned in a short time, and can thereby shorten an air contact time before packed. Thus, the seasoning can give noodle soups having real good flavors and improve productivity and cooking workability for the noodle soups.
