PURPOSE: To separate and recover phytin and starchy substances economically, by adding water and an enzyme (amylase) capable of hydrolyzing starch to a raw material, e.g. rice bran, adjusting the pH of the raw material to 5 or less, solubilizing the starchy substances and phytin, separating the phytin and starchy substances from an insoluble part, and adding a phytin precipitating agent thereto.
CONSTITUTION: A raw material consisting of rice bran, defatted rice bran or/and a processed substance thereof is subjected to the action of an enzyme (amylase) capable of hydrolyzing the starch to hydrolyze and solubilize starchy substances in the raw material. The raw material solution is then adjusted to pH 5.0 or less with an acid, e.g. oxalic acid, to solubilize also the phytin in the raw material. A part insoluble in water, e.g. protein, fiber or fat, is then removed and separeated. A phytin precipitating agent, e.g. NaOH or an alcohol, is added to the resultant aqueous solution of the hydrolyzed starchy substances and the phytin to obtain a pastelike phytin by the filtration, etc. The aqueous solution of the hydrolyzed starchy substances is then acidified, purified, concentrated and dried.
