Abstract:

PURPOSE: To separate and purify potato starch in high efficiency, by treating grated potatoes with a complex enzyme agent containing pectinase, ellulase and hemicellulase, and separating the solid from the juice by centrifugation.

CONSTITUTION: Potatoes such as white potato, sweet potato, cassava, etc. are washed, grated, controlled to 3W5.5pH, and treated with a comlex enzyme agent prepared from bacteria belonging to Aspergillus genus. The preferable amounts of the enzymes are 80≥ units (pectin-viscosity lowering titer) of pectinase, ≥60 units (CMC-ase activity) of cellulase and ≥20 units (arabinoxylanase activity) and ≥20 units (arabinogalactanase activity) of hemicel lulase, per 1kg of the potato. The enzymatic treatment is carried out at 15W 50°C, and the solid is separated from the juice by the continuous centrifugal separator.
