PURPOSE: To prepare potato chips containing sesame seeds almost keeping the original shape, its preparation process and apparatus.

CONSTITUTION: A main raw material 1' composed of potato powder and optional starch powder is mixed with sesame seeds 1" with a mixer 2, incorporated with water and kneaded under heating in an extruder 11. A part or total of the starch in the raw material 1' is gelatinized and the mixture is extruded in the form of a thick dough sheet 12 through a slit 11e having a gap larger than the size of the sesame seed. The dough 12 is rolled with a roller 13, drawn to a thin dough sheet 14 taking care of not to cause the collapse of the sesame seed and pelletized to a prescribed form by a molding machine 5. The pellets 15 are dried by the 1st and the 2nd driers 7, 8, fried or treated with hot air in a processing machine 9 and finally seasoned to obtain potato chips 16 containing sesame seeds.
