PURPOSE: To obtain the title food at a low cost free from cook deformation by dissolving gelatin chitosan and reducing saccharides in an acidic solution, forming the solution into a fibrous body, then bringing the formed fibrous body into contact with an alkali, drying, heating and hardening the resultant coagulated material.
CONSTITUTION: Gelatin, chitosan and reducing saccharides (preferably monosaccharides such as glucose, galactose or xylose) is dissolved in an acidic solution and the solution is formed into a fibrous body, which is then brought into contact with an alkali to afford a fibrous body coagulated material. Then the coagulated material is dried and then heated and hardened to provide the aimed food. Furthermore, the chitosan is preferably contained at a weight ratio of 0.0003-0.1 based on the gelatin and the reducing the saccharides are preferably contained at a weight ratio of 0.003-0.3 based on the gelatin.
