PROBLEM TO BE SOLVED: To provide a Shikuwasa(Citrus depressa) fruit-containing processed food in which its quality(acid taste etc.) can be stably secured without being influenced by its harvesting time, and to provide a method for producing the same and others.SOLUTION: Shikuwasa fruit-containing processed food with its acid taste etc. stabilized can be produced by incorporating one or more selected from juice, pulp and skin of a Shikuwasa containing a DNA comprising a particular base sequence into a processed food, for example, such as fruit vinegar, Ponzu vinegar, sauces, soups, dips, dressings, or liqueurs by about 1 to 50 wt.%.SELECTED DRAWING: None
