1311638 Meat aroma L GIVAUDAN & CIE SA 22 Dec 1971 [23 Dec 1970] 59556/71 Heading A2B A synthetic meat aroma is obtained by heating a mixture of proline, cysteine, methionine, or a derivative or salt of these amino acids which form the free acid under the conditions of the process, a pentose and a polyalcohol which is a trihydric alcohol or glycol. The mixture may contain in addition other amino acids and water. The pentose is preferably ribose and the polyalcohol preferably glycerine.
