Abstract:

To provide a shortening-like composition produced without a chemical means and an emulsifier.

The shortening-like composition comprising inulin and liquid-like fat and/or oil is produced through (1) a process for mixing water with the inulin to obtain an inulin dispersion; and (2) a process for mixing the inulin dispersion with a liquid-like oil and/or a liquidized fat to obtain the shortening-like composition containing 26-40 wt.% of the liquid-like oil and/or the liquidized fat.
