PURPOSE: To obtain a shrimp-flavored seasoned food or a cram-flavored seasoned food by finely grinding shrimp shells or cram shells and subsequently adding amino acids, nucleic acid and succinic acid to the finely ground product.
CONSTITUTION: A shrimp-flavored seasoning or cram-flavored seasoning is obtained by adding sodium glutamate, DL-alanine, glycine, 5'-ribonucleotide and disodium sinnamate to the 3-30 micron ultrafinely ground product of shrimp shells or cram shells by the use of a peanuts mill. A method for producing the shrimp-flavored or cram-flavored seasoned food of a marine processed product, daily dish, miso (fermented soy beans) soup, noodles or processed soybean product comprises adding the shrimp-flavored seasoning or cram-flavored seasoning to the food material.
