The skinning apparatus 1 has a front table 10, a knife structure, a toothed holding roller 40, a cleaning roller 50, a discharge chute 70, a back table 80 and a frame 90. Gear-shaped teeth 41 installed in the periphery of a toothed holding roller 40 are extended over the whole length of the roller 40 so as to be parallel to the rotational axis line, and the surface of the cleaning roller 50 has two or more spiral grooves 51 in parallel. A spray device 60 for jetting high pressure water is installed in the vicinity of a contact part of the toothed holding roller 40 and the cleaning roller 50, and a spray device 60 can be controlled so as to act only in the skinning operation.
