Abstract:
PURPOSE:To provide the subject new substance containing dietary fibers, having a low calorie, minimized in the content of colored substances and in irritating smells, and useful for an intestinal disorder-preventing agent, etc., by subjecting potato starch to an acid addition and a thermal treatment and subsequently hydrolyzing the treated product with alpha-amylase and glucoamylase. CONSTITUTION:The objective substance is obtained by adding hydrochloric acid to potato starch, heating the mixture, hydrolyzing the produced roasted dextrin with alpha-amylase and glucoamylase and subsequently separating a half or more of the produced glucose (Glu), and has a slightly digestible component content of >=80% in components excluding the Glu, a 1 4 glycoside bond-having Glu residue content of 30-35% in the components excluding the Glu, a number- average mol.wt. of 510-965 on the components excluding the Glu, a fluctuation of <=20% between a practically measured value and a value Y calculated from the equation (Y is the number-average mol.wt. of the component excluding the Glu; X is the content of the Glu residues having both the 1 4 glycoside bonds and the 1 6 glycoside bonds and measured by a methylation method), and a ratio of the weight-average mol.wt. to the number-average mol.wt. of the potato starch of 25:1.
