Abstract:

PROBLEM TO BE SOLVED: To obtain grain flour capable of preventing scattering of water content in storage of grain flour (rice, wheat, buckwheat or corn flour), keeping adequate amount of water content, preventing oxidation reaction during the storage, eliminating unpleasant odor characteristic of grain flour and being always uniform and having good keeping quality.
SOLUTION: This grain flour (polished rice, wheat flour, etc.) in which smoked liquid is absorbed is obtained by absorbing smoked liquid into polished rice, wheat flour, etc., and drying the polished rice, wheat flour, etc. Furthermore, the smoked liquid is prepared by thermally decomposing raw wood of broadleaf tree in a reducing atmosphere, cooling and condensing the resultant distilled vapor and purifying the condensate.
