Abstract:

PURPOSE: To obtain smoked livers having a smooth texture, with retained active constituents of the raw material, by cooking smoked livers of domestic fowls at a high temperature and pressure in a short time.

CONSTITUTION: The blood of fresh livers of cows, swine, chickens, or turkeys, are squeezed out. The livers are then salted, desalted, air-dried, smoked at a temperature of 30°C or above for about 2hr, and cooked cooked in an autoclave at 114W116°C for about 4W6min.
