Abstract:

PURPOSE: To obtain a cheese having both creamy flavor and smoke flavor, by filling hot-melt cheese in an air-permeable casing, cooling and solidifying the cheese, cutting the solidified cheese to a desired thickness, covering the both cut ends of the cut cheese with an air-permeable film and smoking the covered cheese.

CONSTITUTION: A plastic cheese melted while heating by a conventional method is filled in an air-permeable casing, cooled, solidified, formed, then cut to a desired thickness to cover both cut ends of the above-mentioned cut cheese with an air-permeable film. The covered and cut cheese is then smoked, preferably at 45W50°C and 60W85% relative humidity to afford the aimed cheese having the whole surface smoked.
