Abstract:

PURPOSE: To obtain the subject new food hardly falling a solid food ingredient from spread when applied to bread, etc., by blending water-in-oil type gas- containing spread such as whip cream with a material obtained by covering wet solid ingredient having sweetness with a paste.

CONSTITUTION: This food comprises blending water-in-oil type gas-containing spread (e.g. whipped shortening) with a material obtained by covering a wet solid food ingredient having sweetness (e.g. arrange immersed with sirup or boiled adzuki bean with a paste (preferably alfatized starch). The paste is preferably used in an amount of 1-3 pts.wt. based on 100 pts.wt. of the solid ingredient and a ratio of solid ingredient to the spread is normally preferably (500:50) to (80:20). Furthermore, the food obtained by lightly blending, e.g. a solid ingredient having 1-3cm size with paste to such extent that the surface of the solid tool is covered and blending the blend with a water-in-oil type gas-containing spread to such degree that the solid ingredient is uniformly dispersed.
