Abstract:

To provide a low amylose tapioca starch which exhibits good solution stability, including freeze-thaw stability.

The solution stable low amylose tapioca starch has a chain length distribution similar to that of a regular tapioca starch, is excellent in solution stability including freeze-thaw stability and hence is useful in a wide variety of food, pharmaceutical and industrial applications, either with or without chemical modification.
