PURPOSE: To provide the emulsifier composition with enhanced emulsifying force and safety capable of being applied to cosmetics and foods by compounding a polyhydric alcohol to a hydrophilic fatty acid ester of sorbitan or sorbitol.
CONSTITUTION: To a hydrophilic sorbitol fatty acid ester and a hydrophilic sorbitan fatty acid ester, 1/2W20 times parts weight polyhydric alcohol such as glycerine and, according to necessiry, a small amount of water and a nonionic active agent are further added. If oils or fats such as olive oil are mixed with said emulsifier composition, said oils or fats are stably dispersed in a polyol and a transparent or a translucent gell like or viscous liquid is obtained. If water is added to the resulting oil in polyol type emulsion, an oil in water type emulsion with a fine particle size is easily obtained in a form almost equal to natural emulsification.
