Abstract:
To provide a soy milk for foaming that is foamed with a steamer or the like and holds the bubbles not to break even when added to beverage such as coffee, offering excellent foamability and foam stability.SOLUTION: A soy milk for foaming contains at least one modified starch selected from the group consisting of phosphate crosslinked starch, phosphoric monoesterified phosphate crosslinked starch, acetate starch, phosphorylated starch, and acetylated adipate crosslinked starch.
