Abstract:

PURPOSE: To readily obtain the titled novel colorless imparting agent, consisting of soy sauce pasteurized sediment and distillate liquid of soy sauce oil having well balanced aroma unique to brewed soy sauce without irritant smell, by utilizing a by-product.

CONSTITUTION: The aimed imparting agent obtained by blending soy sauce pasteurized sediment with distillate liquid of soy sauce oil obtained in producing pasteurized soy sauce as a by-product, preferably at 50:50 volume ratio.
