Abstract:
To produce a soybean milk fermented food having sufficient stability as an in esting food and excellent flavor by using Bifidobacteria belonging to Bifidobacterium catenulatum and Bifidobacterium pseudocatenulatum which have not been usually used for foods.
This Bifidobacterium-containing soybean milk fermented food is obtained by fermenting a soybean milk medium with bifidobacteria selected from bifidobacterium catenulatum and Bifidobacterium pseudocatenulatum.
