Abstract:

To provide a soybean milk whippy ice cream mix which keeps smell unique to soybeans suppressed, and is capable of prevailing more widely than by a conventional manner.

This whippy ice cream mix containing soybeans as main components is characterized to further contain coconut. In this case, this whippy ice cream mix may contain beet sugar as main sweet taste components. Also, it may contain soybean whipping. Moreover, it may contain starch of 0.8 wt.% or more, glucose of 0.3 wt.% or more and thickening polysaccharides of 0.01 wt.% or more.
