Abstract:
PROBLEM TO BE SOLVED: To provide a sponge dough having deliciousness, volume and flexibility, no crack and good in appearance and taste notwithstanding the absence of allergic substances of wheat, egg, and milk, a burned sponge dough, a roll cake and a manufacturing method capable of industrial production thereof.SOLUTION: There is provided a manufacturing method of a sponge dough containing no wheat, no egg and no milk, a cellulose derivative, powders and a liquid raw material and having (1) a process for foaming the cellulose derivative, (2) a process for mixing the liquid raw material and forming the same, (3) a process for mixing the foam obtained in the (1) and the foam obtained in the (2), and (4) a process for stirring and mixing the foam obtained in the (3) and the powders.SELECTED DRAWING: None
