To provide a spore sprouting method for sterilizing without deteriorating quality, spore-forming bacteria contained in liquid egg or an egg-processed product and spores which are formed by the spore-forming bacteria, and to provide a spore-forming bacterium sterilization method.
This spore sprouting method includes sprouting spores which are formed by spore-forming bacteria, contained in liquid egg or an egg processed product without deteriorating the quality of the liquid egg or the egg-processed product. Specifically, the method includes subjecting the liquid egg or the egg processed product to pressure treatment of 10 MPa-200 MPa at 5C or higher and lower than 60C for 1 min-120 min. The spore-forming bacterium sterilizing method includes sprouting spores which are contained in the liquid or an egg-processed product by the spore sprouting method, and performing sterilization treatment for sterilizing the sprouted spores.
