Abstract:

PURPOSE: To enable the bleaching and the artificial aging of a processed meat, and the maintenance of the freshness of the meat, by mixing a processed meat with a proper amount of stabilized chlorine dioxide.

CONSTITUTION: A processed meat product (e.g. ham, sausage, etc.) is mixed with a proper amount of stabilized chlorine dioxide in the form of aqueous solution, powder, granule, etc. The bleaching and artificial aging of the processed meat product and the maintenance of the freshness of the meat can be carried out by this process.
