Abstract:
PURPOSE: To impart a longer shelf life and improved sweetness maintained for a long time to a stabilized dipeptide sweetener compsn. suitable for use in chewing gum. CONSTITUTION: A dipeptide sweetener such as aspartame is encapsulated through a water-free process in which crystals of the sweetener are compressed in a mixture of inert binder components in a tablet or sheet shape and fine particles are formed by pulverization. The formed particles are coated with a hydrophobic material such as fat or wax and added to various foods such as chewing gum. The resultant sweetener compsn. is protected from severe environmental conditions including high temp., humidity and pH.
