Abstract:
To obtain iron-enriched edible oils and fats and an iron-enriched edible oils and fats-containing food having high oxidation stability.
The iron-enriches edible oils and fats and iron-enriched edible oils and fats-containing food are each obtained by compounding edible oils and fats and edible oils and fats-containing food with a carbonic acid and/or bicarbonic acid-iron-casein complex containing 1-1,000 atom iron and ≥1 molecule carbonic acid and/or bicarbonic acid per molecule of casein. Margarine, butter, nursery powdered milk or the like is exemplified as the iron-enriched edible oils and fats-containing food.
