To obtain an aging inhibitor capable of preventing a starch-containing food from aging and to provide a method of preventing the starch-containing food from aging.

A red pepper extract is found to have aging inhibitory performances. The red pepper extract is added to the starch-containing food to prevent the starch-containing food from aging. The starch-containing food to prevent aging can be produced.
