Abstract:

PURPOSE: To obtain a starch gel suitable as outer pastry of frozen food, not forming ice crystals even in a freezing temperature range, being transparent and soft, consisting essentially of a given amount of a saccharide such as monosaccharide, starch and water.

CONSTITUTION: This starch gel consists essentially of a saccharide selected from monosaccharides and sugaralcohols, starch and water and the content of the saccharide is ≥100% based on water. The starch gel is used as an outer pastry, and an inner ingredient such as beam jam, ice cream or a semifredd (a semifrozen ice cream with reduced ice crystals) edible in a frozen state is wrapped in the outer pastry to give a frozen confectionary.
