To obtain a starch which can be easily gelatinized at a small quantity of heat, can satisfactorily improve interlaminar strength and intralaminar strength (strength in the direction of the Z axis) and is reduced in escape into a drainage system by heat-treating a starch in the absence of any acid under specified conditions.
This starch is heat-treated in the absence of any acid under conditions in which the heating temperature is in the range of 150-200°C, and the heat treatment time is such that the amount of the formed water-soluble component is within the range of 0.1-10% based on the absolute dry weight of the starch. The moisture content of the starch as the starting material should be within 10% based on the absolute dry weight of the starch.
