Abstract:

PURPOSE: To obtain the title composition having low sweetness and good body as well as excellent heat resistance, acid resistance and low coloring properties by treating starch, etc., with α-amylase and debranching enzyme of malt to prepare starch sugar such as maltohexaose and then adding the resultant starch sugar to raw materials for drink and food, etc.
CONSTITUTION: Starch or starch-based sugar is simultaneously treated with α-amylase (preferably used at an amount of 0.5-50 unit per g starch) of malt and debranching enzyme (e.g. pullulanase) to prepare starch sugar containing maltohexaose and maltoheptaose as main components and the starch sugar, preferably of ≥1wt.% is added to one kind of raw material selected from drink and food, favorite food, cosmetic and medicine to provide the objective composition.
