Abstract:

To provide processed starch highly safe without the need of using chemicals or a large amount of service water, and efficiently modified in gelation characteristics of starch through effectively using protein and transglutaminase generally used for food.

The starch with protein coating is obtained by subjecting starch whose surface is attached with protein to transglutaminase treatment in the existence of 15-50% water.
