Abstract:
PROBLEM TO BE SOLVED: To provide Bulgarian yoghurt improved in favor and preservation stability by containing a strain selected out of the subspecies bulgaricus group of Lactobacillus delbrueckii as monoculture solution or the like and a starter for lactic acid product. SOLUTION: This Bulgarian yoghurt contains strains more than one kind selected out of the subspecies bulgaricus group of Lactobacillus delbrueckii on a table I and/or srains more than one kind selected out of the subspecies thermophilus group of streptococcussalivarius on a table II as the monoculture substance, mixed culture substance or symbiotic culture substance. In this case, this monoculture substance or mixed starter can be provided by cultivating the monoculture substance based on the strains on the tables I and II showing a true culture substance isolated from Bulgarian yoghurt on a liquid nutritional medium and on a solid nutritional medium later, selecting any monoculture substance based on the morphological characters of colony, inoculating this selected monoculture substance onto the liquid nutritional medium and cultivating it under pH4.6±0.1 at 42 deg.C.
