Abstract:

PURPOSE: To obtain the subject food suitable as e.g. noodle strip food, having hydrophobic coating layer consisting mainly of zein, capable of preventing migration of the water from the inside of the food or deposition and absorption of water from the outside, thus retaining its favorable palate feeling and crisp feeling for a long time.
CONSTITUTION: This steamed, baked or fried food in a refrigerated or frozen state has hydrophobic coating layer consisting mainly of zein such as a protein in corn. It is preferable that the zein content of this food be 1-25wt.%.
