To obtain the subject food material preservable for a long term at normal temperatures without dissipating its raw material flavor by nonsterilely packaging a solid food material with a packaging material so as to be brought into firm contact with each other and then sterilizing the resultant packages through dielectric heating.
This method is to form packages, wherein a solid food material and packaging material come into firm contact with each other by nonsterilely packaging the solid food material with the packaging material so as to be brought into contact with each other, and then sterilize the resultant packages by dielectric heating. A frequency of an electric field used in the dielectric heating is preferably 1 MHz to several GHz, more preferably 1 to 100 MHz. Furthermore, preferably the dielectric heating is conducted by applying a high- frequency electric field to electrodes between which a vessel encapsulated with the packages is disposed. Such a heating can be carried out, for example, in such a way that seal-packaged samples to be heated are put into a shell 6 of the heating section 4 in a sterilizer 1 with a high-frequency oscillator 2 and disposed between the electrodes 5a and 5b.
