This sterilizing apparatus for heat sterilizing a food material comprises releasing steam from a steam releasing pipe 2 arranged in the boiler body 1 and directly blowing steam on the food material (A) held in the boiler body. The steam releasing pipe and a washing liquid releasing pipe are arranged below a food material setting part, and the food material is heat sterilized with steam released from the steam releasing pipe, and the boiler body is washed by washing liquid released from the washing liquid releasing pipe after taking the food material out from the boiler body. As the food material is heat sterilized through releasing steam from the lower part of the food material setting part, no drain water of steam attaches to the food material. Furthermore, since the washing liquid is released from the washing releasing pipe after heat sterilizing and the boiler body is cleaned, the quality of the food material is retained more properly.
