Abstract:
To enhance the flavor of fermented milk without ruining its favorable qualities.
This method for sterilizing a fermented milk material comprises: a first heating process in which a fermented milk material is heated up to a first process temperature from 85C to 95C and then retained for 5 to 15 minutes; a second heating process in which after the first heating process, the fermented milk material is heated up to a second process temperature from 100C to 150C and then retained for 2 to 5.5 seconds; and a cooling process in which after the second heating process, the fermented milk material is boiled under reduced pressure and cooled down to a third process temperature below the second process temperature.
