Abstract:
PURPOSE: To obtain hygienically excellent foods free from adhesion of various germs by sterilizing air introduced into a cooling after vacuum cooling with steam.
CONSTITUTION: A food in a cooling tank 1 is cooled while evacuating the interior of the tank 1 by operation of a vacuum apparatus 6 and then, air is introduced from sterilized air feeder 9 having an air feeder 11, a steam feeder 12 and a sterilizing chamber 15 into the cooling tank 1. Steam for heating is also fed into the cooling tank 1 to prevent the surface of the food from hardening.
