PURPOSE: To provide unpolished rice which can be stored for a long period and cooked in the similar way as the cooking of polished rice, by immersing unpolished rice in fresh water, and cooking, cooling and drying the rice.

CONSTITUTION: Unpolished rice is immersed in fresh water or in some cases in saline water for 20W30hr, washed with fresh water, drained, cooked in a similar way to the cooking of glutinous rice or SEKIHAN (festive red rice), cooled with chilled air, dried e.g. by stirring homogeneously in a rotary pan introducing hot air into the pan, and sealed in a synthetic resin bag or can, etc.
