Then, the contaminants are removed from the resultant lactosucrose-containing saccharide solution, preferably by alkali or alkaline earth metal type storing acid cationic ion-exchange resin column chromatography using only water to give a solution containing more than 45w/w% of lactosucrose and the solution is collected. usually, the glysyltransferase is allowed to act on an aqueous solution containing sucrose and lactose at a ratio of 1/10-10/1 in the total saccharide concentration of 10-60wt.% at a pH of 3-9 and a temperature of 5-70°C.
