Abstract:
PROBLEM TO BE SOLVED: To obtain a food product having a coating which increases crispness and/or crunchiness by treating the core with a sorbitol syrup and other specific polyol.
SOLUTION: The cores to be chewed for eating or cores for medicinal purpose are coated with (A) a sorbitol syrup and (B) a crystalline polyol of at least one selected from isomaltol, xylitol and erythritol. This material is suitably used to coat chewing gums or candies. After the rotating core lumps are coated with the component (A), the coated lumps are treated with the component (B) and dried. These operations are repeated until the objective coating having desired thickness and structure is obtained.
