To obtain liquors highly containing ethyl-α-glucoside, especially sweet Sake (glutinous rice wine, Mirin), liqueurs or miscellaneous liquor containing ≥0.2 wt.% of ethyl-α-glucoside and an alcohol beverage having a low alcohol content and a high ethyl-α-glucoside content, and to provide a method for producing them.
The sweet Sake, the liqueurs or the miscellaneous liquor highly contains ethyl-α-glucoside. In the method for producing the sweet Sake, the liqueurs or the miscellaneous liquor, especially in the method for producing sweet Sake having a reduced malted rice rate, an α-glucosidase agent is used. The liquors highly containing ethyl-α-glucoside is diluted with fruit juice to give alcohol beverage having a low alcohol content and high ethyl-α-glucoside content.
