Abstract:

To provide a method modifying a conventional sweetener having plain and simple sweetness and insufficient penetrability to an ingredient, giving the resultant sweetener a function of giving body, feeling of thickness or feeling of boiling to a food, especially a boiled food and increasing the penetrability of the sweetener to an ingredient.

The objective sweetener composition for a boiled food is characterized by comprising as the active ingredient at least one kind (a sweetener section) of sweeteners selected from saccharide, a sugar alcohol and a sweetener with a high degree of sweetness, an edible univalent metal salt (an edible metal salt section) and/or a seasoning (a seasoning section).
