Abstract:

To provide a biocatalytic process for producing an optically active phenylalanine analogues from an arylacrylic acid.

A yeast fungus, Rhodotorula graminis, including phenylalanine ammonialyase introduces an ammonia molecule into the double bond of a stereospecifically 3-position substituted acrylic acid. As a substituent in the 3-position of acrylic acid, are cited an aromatic ring, for example, a substituted phenyl group, a five-membered aromatic heterocyclic ring, a 6-membered heterocyclic ring and the like.
