Abstract:
PURPOSE: To enable the automatic completion of a water driving step in a brewing plant for SAKE (Japanese rice wine).
CONSTITUTION: This system for automatically completing the water drive in a brewing plant for SAKE is obtained by installing the first automatic changeover valve 27 and a concentration meter 30 in the terminal part 25 on the side of a pipe 24 in transferring the SAKE from an inlet tank 10 through pipes 23 and 24 and a transfer pipe 22 to a clarifying tank 12 utilizing pushing water attaching the second automatic changeover valve on a drain pipe 26 branched from the upstream side of the first automatic changeover valve 27, further installing an electric conductivity meter 29 in the terminal part on the side of the inlet tank 10 in the pipe 23, starting the water pushing step when the emptying of the side of the inlet tank 10 is sensed with the electric conductivity meter 29 and judging that the SAKE is transferred to water when the alcohol concentration sensed with the concentration meter 30 is reduced from a prescribed alcohol concentration after starting the water pushing step and carrying out the changeover so as to close the first automatic changeover valve and open the second automatic changeover valve.
