Abstract:

PURPOSE: To provide tangerine vinegar containing tangerine juice as one of the raw materials, which is good for the health and increases its acidity with time by the living yeast existing in the vinegar.

CONSTITUTION: A mixture of (A) 108l of water, (B) 72l of tangerine juice, (C) 15kg of sugar and (D) malted rice prepared from 20kg of rice, is charged in a 200l enameled tank, and thoroughly stirred. After 10 days of storage, the mixture becomes bitter, and attains an alcohol content of about 15%. Two or three days thereafter, the acidity of the mixture begins to increase. The presence of tangerine juice accelerates the acidification of the mixture, and nice natural vinegar an acidity of ≥4.3% can be prepared in 25W26 days.
